Running Microsoft SQL Server on VMware ESX as a virtual machine means no trouble at all, it's certitied(*) solution from VMware and even from Microsoft -- see Support for Microsoft Software in VMware Virtual Machines.
However, there's the little thing you have to REMEMBER - restoring from backup.
It's better that you backup and restore using build-in or 3rd party database tools, not by using VMware VCB. Why?
It's database you are restoring. It has to be that way. And don't forget that returning time from the future to the past could seriously hurt your database machine and data corruption could occur. Gluck restoring!
